Lemon Grouper Filets
Ingredients
4 grouper fillets
1 tsp salt
1 and 1/2 tsp pepper
1/4 cup butter
2 grated cloves of garlic
1/2 cup dry white wine
3 tbsp lemon juice
1/4 cup evaporated milk
5 tbsp dried basil (reconstitute in the lemon juice)
Directions
In a large skillet, melt butter over low heat. Add garlic and 1/2 teaspoon pepper. Add wine and heat to boiling over medium heat. Stir constantly while boiling until sauce is reduced by half. Stir in evaporated milk and basil. Simmer until thickened. If needed add cornstarch to thicken sauce. Salt and pepper both sides of the grouper filets, and broil for 10-15 minutes until done. Serve grouper filets and top with cream sauce.
