Mini Crab Cakes
16 (3/4-ounce) slices sourdough bread
3/4 cup mayonnaise
3/4 teaspoon lemon zest
3 1/2 tablespoons chopped fresh dill, divided
1/2 teaspoon salt
12 ounces lump crabmeat, drained and picked
2 tablespoons finely chopped red onion
32 (1/4-inch-thick) Roma tomato slices
4 ounces Gruyere cheese, grated (about 1 cup)
1/4 teaspoon freshly ground black pepper

1. Preheat broiler. Arrange bread slices in a single layer on a baking sheet, and broil 1 to 2 minutes on each side or until lightly golden and toasted.
2. Whisk together mayonnaise, lemon zest, 3 tablespoons dill, and 1/4 teaspoon salt in a small mixing bowl. Combine crab, onion, and 1/4 teaspoon salt in a medium mixing bowl. Add 2 tablespoons mayonnaise mixture to bowl; stir to combine.
3. Spread remaining mayonnaise mixture evenly over toasts. Divide crab mixture evenly over toasts; top evenly with tomato slices and cheese. Broil 3 minutes or until cheese melts. Sprinkle with black pepper and remaining 1/2 tablespoon dill. Serve immediately.

One of my family's favorite beach read or any other read is about Helen Keller, who was born in Tuscumbia, Alabama on June 27, 1880. Ms. Keller overcame my adversities and struggles in her life, just as my family has overcome adversity. A sickness with a high fever robbed Helen of her hearing and her site. She struggled, but worked hard and had determination to study, learn, and be a production member of society. My husband and myself have 5 wonderful children, but our second daughter was born with some genetic birth defects. At 22 months old she had back surgery (tethered cord release), age 7 after MANY kidney problems, she had kidney repair surgery (to correct kidney reflux). She has had numerous tests and spent many days in Kosair Children's Hospital, but has overcame it all. She is now a healthy, active, and straight A twelve-year-old student. She was elected by her peers as President of her schools Jr. Beta Club, which is a service organization. We have 4 other children and live on the family farm.  We love stories like Helen Keller's when one over comes disabilities and turns them in to abilities! Just as when Helen realized that w-a-t-e-r meant something cool flowing over her hand. It awakened her soul, gave it light, hope, joy, and set it free.  So has the good Lord above giving us such wonderful blessings we call children. This trip would be so great for our family to get away for a few days and just be together enjoying the beautiful beach and each other. Thank you for this contest.
