Peach Cobbler Bread Pudding Recipe

Ingredients
  • 3 – 4 Peaches
  • ¾ Cup of brown sugar
  • ½ Tbsp of cinnamon
  • 1 Tbsp of cornstarch
  • 1 Quart of heavy cream
  • 1 Loaf of French bread
  • 2 12 oz. bags of white chocolate chips
  • 6 Egg yolks
  • ½ Cup of sugar
  • ¼ Tsp of salt
  • ¼ Cup of bourbon or peach schnapps (or a combination of the two)
Directions

Peach Filling

  • Peel and dice peaches.
  • Simmer peaches, brown sugar and cinnamon. Once at a simmer add cornstarch to thicken.
  • Cook until peaches are al dente.
  • Let cool.

Bread Pudding

  • Slice French bread into 1-to-2-inch cubes, set aside.
  • Bring heavy cream, sugar, and salt to a boil.
  • Pour mixture over white chocolate, whisk until mixture is smooth. Whisk in alcohol.
  • Stream in egg yolks, whisking constantly.
  • Pour mixture over cubed bread, let rest 30 minutes to saturate bread.
  • Mix in peach filling throughout bread pudding.
  • Bake at 350 degrees for 35 minutes.
  • Serve warm with ice cream.
