Peach Cobbler Bread Pudding Recipe

Ingredients
- 3 – 4 Peaches
- ¾ Cup of brown sugar
- ½ Tbsp of cinnamon
- 1 Tbsp of cornstarch
- 1 Quart of heavy cream
- 1 Loaf of French bread
- 2 12 oz. bags of white chocolate chips
- 6 Egg yolks
- ½ Cup of sugar
- ¼ Tsp of salt
- ¼ Cup of bourbon or peach schnapps (or a combination of the two)
Directions
Peach Filling
- Peel and dice peaches.
- Simmer peaches, brown sugar and cinnamon. Once at a simmer add cornstarch to thicken.
- Cook until peaches are al dente.
- Let cool.
Bread Pudding
- Slice French bread into 1-to-2-inch cubes, set aside.
- Bring heavy cream, sugar, and salt to a boil.
- Pour mixture over white chocolate, whisk until mixture is smooth. Whisk in alcohol.
- Stream in egg yolks, whisking constantly.
- Pour mixture over cubed bread, let rest 30 minutes to saturate bread.
- Mix in peach filling throughout bread pudding.
- Bake at 350 degrees for 35 minutes.
- Serve warm with ice cream.
