Chargrilled & Charbroiled Oysters Recipe

Ingredients
  • 24 oysters on the half shell
  • 6" sub roll cut in half
  • 1 cup of garlic margarine
  • 2 tbsp of Joe & Dave's Garlic Sauce
  • 1/4 cup of chopped garlic
  • 3/4 tsp of Lawry's seasoning salt
  • 2/3 cup of grated Parmesan cheese
  • 1/3 cup of grated Romano cheese
  • 1 tbsp of dried parsley
Directions
On the Grill
  1. For the sauce, mix all sauce ingredients together in a mixing bowl.
  2. In a separate mixing bowl, mix together cheeses and parsley.
  3. Bring grill to a medium high heat.
  4. Spread oysters out on sheet pan, pizza pan or other type of baking sheet.
  5. Using a ladle, divide garlic sauce evenly on oysters.
  6. Using a tablespoon, generously divide cheese mixture evenly on oysters.
  7. Using tongs, place oysters on grill and grill approximately 8-10 minutes until edge of shells are golden brown and cheese is melted. Using tongs rotate oysters around as necessary. Use caution as flames may flare up as butter drips into charcoal or flames.
  8. While oysters are cooking, place unbuttered sub roll halves on grill and toast to a golden brown. 
  9. Plate oysters and bread once cooked, and use the bread to soak up sauce.
In the Oven
  1. For the sauce, mix all sauce ingredients together in a mixing bowl.
  2. In a separate mixing bowl, mix together cheeses and parsley.
  3. Turn oven to broil at 450 degrees and place oven rack in the middle.
  4. Line one or more muffin tins with 24 foil muffin cups.
  5. Place one oyster in each of the 24 muffin cups.
  6. Using a ladle, divide garlic sauce evenly on oysters.
  7. Using a tablespoon, generously divide cheese mixture evenly on oysters.
  8. Place muffin tins in oven and broil for 6-8 minutes or until cheese begins to melt and turns golden brown.
  9. While oysters are cooking, place sub rolls on a separate sheet pan or cookie sheet. Place in oven under broiler and toast until light brown.
  10. Plate oysters and bread once cooked, and use the bread to soak up sauce.
